Haupia Sweet Potato Pie Hawai'i style! Island ingredients foraged by hand! Kimi Werner Recipe

After digging up beautiful Hawaiian sweet potatoes, harvesting macadamia nuts and bananas, Kimi Werner cooks up an island classic dessert- Haupia Sweet Potato Pie! Layers of homemade macadamia crust, sweet potato filling, fresh banana and homemade coconut pudding all come together in perfect island harmony in this sweet Maui episode!

Ingredients:

Crust:
2 sticks butter
1/2 cup organic sugar
2 cups flour
pinch of salt
handful of roasted macadamia nuts roughly chopped
handful dark chocolate chips

Sweet potato filling:
3-4 medium sweet potatoes
1/2 cup honey
1/2 cup coconut milk
1/2 cup coconut oil
2 eggs

Haupia:
4 cups coconut milk
1/2 cup cornstarch completely dissolved in a bit of water or coconut milk
1 teaspoon vanilla extract or seeds from a vanilla bean
Honey or sugar to taste or about 1/2 cup

(very important to boil/simmer haupia until it's thick before removing from stove)

Chopped roasted macadamia nuts to garnish top
