Traditional Egg Custard Mooncakes

375°F 10 mins
(bake for 5 mins, brush egg yolk then bake for 5 more mins)

Filling- steam for 25 mins
(steam for 20 mins, stir, steam for 5 more mins)
For the filling:
60 g granulated sugar
35 g milk powder
40 g custard powder
80 g corn starch
90 g light cream
110 g unsalted butter
80 g coconut milk
50 g condensed milk
2 salted egg yolks
1 tsp vanilla extract

For the crust:
150 g all purpose flour
35 g granulated sugar
60 g corn starch
20 g milk powder
20 g custard powder
20 g condensed milk
30 g light cream
90 g unsalted butter
1/2 tsp salt
25 g coconut milk
1 egg yolk

190°C 10分钟
(先烤5分钟,取出刷上蛋黄液再烤5分钟)

内馅:
60克 白糖
35克 奶粉
40克 吉士粉/卡士达粉
80克 玉米淀粉
90克 淡奶油
110克 无盐黄油
80克 椰奶
50克 炼乳
2个 咸鸭蛋黄
1小勺 香草液

酥皮:
150克 面粉
35克 白糖
60克 玉米淀粉
20克 奶粉
20克 吉士粉/卡士达粉
20克 炼乳
30克 淡奶油
90克 无盐黄油
1/2小勺 盐
25克 椰奶
1个 蛋黄
