[Eng Recipe] How to make Black Eyed Beans Tea Cake (眉豆茶粿)

10-12個材料及份量
皮料:糯米粉(glutinous rice flour / sweet rice flour)230g、中筋粉(Plain flour /all-purpose flour)40g、滾水(boi|ed water)200g
饀料:眉豆(black eyed bean)150g、虾米(dried shrimp)30g、鹽(salt)5g、糖(sugar)10g、五香粉(chinese five spice)1g、胡椒粉(white pepper powder)1g
做法:先將眉豆浸較身(約2-3小時),用2-3碗水煮至稔撈起壓成蓉,少許油起鑊,爆香虾米加入眉豆蓉及調味料炒勻待凉備用。
粉類拌勻加入滾水搓成糰,分等份做成窩形包入饀料,放於糭葉或牛油紙上,噴或搽上水份,以大火蒸約10-15分鐘(視乎成品大小而定),蒸好後塗上少許熟油(免太黐)便成可享用。
Recipe for 10-12 Tea Cakes
Skin Ingredients: Glutinous rice flour / sweet rice flour 230g, Plain flour / all-purpose flour 40g, boiling water 200g
Filling Ingredients: Black eyed bean 150g, Dried shrimp 30g, Salt 5g, Sugar 10g, Chinese five spice 1g, White pepper powder 1g
Instructions: Boil the Black eyed beans for 15-30 minutes until they are soft, whilst there still hot mash them into a paste. Cook the dried shrimp and bean paste then add the salt, sugar, five spice and white pepper. Cook until they have mixed together and let it cool down.
Mix the 2 flours together then add the boiling water in the bowl, knead the flour until it is a dough form (you can use a wet towel to cover the bowl to prevent it drying up). Cut the dough into 10-12 balls, make the dough ball into a bowl shape and place the filling in the dough. Before steaming put layer of water on tea cakes, steam the tea cakes over boiling water for 10-15 minutes then finally put a layer of cooked oil on the tea cakes so it is less sticky.
