Ube Custard Doughnuts

Hey there lovelies~! Here's another ube recipe for y'all to try at home! I got this idea because I passed by Dunkin' Donuts but I didn't have enough money with me to buy a box of ube doughnuts :)) I'm actually pretty happy I was broke that day because I was so determined to eat some ube doughnuts! Haha! So here's the outcome of a very determined hungry girl. I pretty much experimented on the ube custard filling and it turned out delicious! I want to play around with the ube custard recipe more because it can be used for cream puffs and eclairs ♥ I hope y'all enjoy the video and recipe :)

How to Make Doughnuts with Ube Custard Cream Filling
Yields: 10 pcs. (using 7.6 cm / 3"inch cookie cutter)

INGREDIENTS:
"*"= Notes/Remarks

~Dough~
280 g (2 1/4 cups) ALL PIRPOSE FLOUR
*You may need more for kneading but just sprinkle lightly with flour if it's sticking to your fingers.
4 g (1 1/2 tsp) INSTANT DRY YEAST
*If you're using Active Dry Yeast, use the same measurement and dissolve the yeast with lukewarm milk and sugar for 5-10 minutes or until it foams up.
2 g (1/4 tsp) SALT
25 g (2 tbsp) SUGAR
118 ml (1/2 cup) MILK, LUKEWARM 34°-38°C (93°-100°F)
*You can use whole milk or evaporated milk. Both works fine
1 large EGG
28 g (2 tbsp) UNSALTED BUTTER

*Knead for 5-8 minutes if you're using a stand mixer. 10-12 minutes if you're kneading by hand. Knead until dough is smooth and supple.
*First Rise: 1-2 hours or until doubled in size
*Proof: 1 hour

~Ube Custard Cream Filling~
3 large EGG YOLKS
50 g (1/4 cup) SUGAR
5 g (2 tbsp) ALL PURPOSE FLOUR
5 g (2 tbsp) CORN STARCH
10 g (1 tbsp) UBE POWDER (get it here: https://shopee.prf.hn/l/6qO3V1o)
300 ml ( cup + 4 tbsp) MILK
20 g (1 tbsp) UBE HALAYA
1 ml (1/4 tsp) UBE EXTRACT

*Reduce the flour and corn starch by half (1 tbsp each) for a slightly runny custard.
*You can use a strainer to remove the bits of ube halaya if you want your custard smoother. I didn't bother with it because I don't mind the texture and it doesn't change anything with the flavor.
*Continue stirring the custard in medium heat until it thickens.
*Cover with a plastic wrap and press it down to avoid the custard from forming skin. Refrigerate for at least 1 hour
