Macaron Tower Cake | for Rei's 4th Birthday!
Today, I’m sharing how I made the strawberry fraisier macaron tower cake for Rei’s 4th birthday! In the past, I made a macaron tower for display but this is my first edible macaron tower cake and I truly enjoyed making it. Learn how to make it all from scratch and also check how we celebrated together. Stay till the end to watch her awesome performance with a guitar ;)

🍰 INGREDIENTS FOR THE GENOISE SPONGE:
▪ Egg: 4 large eggs
▪ Granulated sugar: 140g (4.9oz)
▪ Cake flour: 130g (4.6oz)
▪ Milk: 20g (0.7oz, about 4 tsp)
▪ Oil: 40g (1.4oz)
▪ Vanilla extract: 1/4 tsp
* I made a half batch of the recipe today. You can do one batch to create a bigger macaron tower cake.
🔥BAKE with 355F for about 25-30 mins for 2 6’ pans.
Or about 35mins for 1 8” pan.

🍰 INGREDIENTS FOR THE FRAISIER CREAM:
PASTRY CREAM:
• Whole Milk: 400g (14.1oz)
• Vanilla Beans: 1 stick (I used a lot today as my treat!)
• Granulated Sugar: 120g (4.2oz)
• Egg Yolks: 4
• Corn Starch: 20g (0.7oz)
• All-purpose flour: 20g (0.7oz)
• Salt: A pinch

Frasier cream (Creme Mousseline):
Check the pastry cream recipe above. I made the one batch. The recipe above makes about 550g of pastry cream.
• Pastry cream: 550g
• Unsalted butter(Soften): 550g (about 5 sticks)
• Salt: A few pinches (I forgot to add it this time….!. It happens often lol)
• Kirsch alcohol: 50g (Today, I used milk for Rei!)
• Freeze dried raspberries about 1/2 cup (I used this: https://amzn.to/3iTrYNK)
🍰 INGREDIENTS FOR THE MACARON:
• EGG WHITE 100g (3.5oz)
• POWDERED SUGAR 250g (8.8oz)
• ALMOND FLOUR 260g (9.2oz)
ITALIAN MERINGUE
• EGG WHITE 100g (3.5oz)
• WATER 60g (2.1oz)
• GRANULATED SUGAR 30g(1oz) in a bowl + 230g(8.1oz) in a pod
Heat up the syrup up to 118C (244.4F)
• Pink and Red colorings (I used this: https://amzn.to/3lvUXGq)
🔥 Bake(Preheated) with 300F (150C) for 8-16 mins
* Adjust the time and temperature depending on how they work for your macaron.
* I made the half batch this time but you can make one batch for a bigger cake.
