Traditional Newfoundland Baked Ham and Scallop Potatoes - Bonita's Kitchen

Today we will be making - Baked Ham and Scallop Potatoes! Top with pineapples and a delicious light glaze.

Boiling time 2 hours covered.
Ingredients:

Boiler:
1 Smoked Picnic Ham
1 Medium Onion ( Cubed )
1 Tbsp Black pepper corns

Sauce:

1 Can Crushed Pineapple or cubed
1 Cup brown sugar
1/4 Cup cold water
1 Tbsp Corn starch

Ingredients for roasting with ham.

-1 medium onion slices
- pinch of black pepper

Method:

Preheat oven to 350° , bake time 1/2 uncovered, 1/2 hour covered.

Ham:

In large boiler add water until half full, add picnic ham, 1 tbsp black pepper corns, 1 medium cubed onion, start the water boiling on medium heat for 2 hours.
After ham have boiled remove carefully from boiler into a large bowl remove the net from ham and toss away, and any fat from ham then cut slices in the top of your ham.

Then slice a medium onion placed in the bottom of your roaster , put your ham on top of onion in large roaster with 1 cup warm water.

In a small saucepan add crushed pineapple, brown sugar, 1/4 cup water, 1 tbsp corn starch then cook for 5 minutes.

Pour all your sauce/ glaze over top of ham, grate black pepper.

Cover your ham and bake for one hour, after your hour is up remove cover let brown on the top for another 15 minutes, then remove from heat let rest for 10 minutes, then remove from roaster and place on plater to carve in slices.
The remaining of sauce in roaster you can pour over the top of ham, or in a dish for adding to your meal.
" optional " put 8 red cherries on the top of ham.

Scallop Potatoes:

4 Medium potatoes thinly sliced
3 Cups Shredded Cheddar Cheese
2 Tbsp butter
1 Large egg
1 Cup Milk
1/4 Cup Water
2 Tbsp Flour
1 Tsp olive oil
Sea salt and pepper

Preheat oven to 350°, bake for 40 minutes

4 medium potatoes peel and cut in thin slices, keep in cold water until ready to use.
Place small boiler on stove top turn to medium heat, add 2 tbsp butter let melt then add 2 tbsp flour mix until combined.
Then add 1 cup milk; 2 cups shredded cheddar cheese continue stirring around until combined, then mix together in a small bowl 1/4 cup cold water and 1 egg, then stir it into your boiler, mixing until all the egg water have combined in with your sauce.
Put about 4 or 5 grates of black pepper in with your sauce continue boiling until it have started to thicken, remove from heat.

In a glass baking dish or a dish of choice, pour 1 tsp olive oil in dish, start layering your potatoes pour some sauce over them topped with more shredded cheddar cheese and some grates black pepper and sea salt. Continue layering until all your potatoes and sauce are used, top with more shredded cheddar cheese place in a 350° oven for 40 minutes.
You can bake in oven with your ham take it out after the 40 minute are up.
When scallop potatoes are baked remove from oven cover with foil wrap until ready to serve
