Recipe:
Ingredients:
160 g almond flour (or gluten-free baking mix)
250 g rice flour
1.5 tbsp avocado oil
380 g freshly squeezed orange juice
10 g baking powder
Orange zest
Raisins and dried fruits to taste

For the glaze:
200 ml coconut milk
1 tbsp cornstarch
1 tbsp Jerusalem artichoke syrup or honey
1 tsp lemon juice
A pinch of salt

Instructions:
Grate the orange zest and squeeze the juice. Rinse the raisins and soak them for 15 minutes.
In a bowl, mix the avocado oil with all dry ingredients, then gradually pour in the orange juice. Knead the dough and add raisins and dried fruits. Pour into molds and bake at 200°C (390°F) for 40–50 minutes.
For the glaze: warm the coconut milk to room temperature, then add the cornstarch, syrup or honey, lemon juice, and a pinch of salt. Cook over low heat, stirring constantly until the glaze thickens. Cover the baked cakes with the glaze.
