15 Minute Asparagus Lemon Basil Pasta

ASPARAGUS LEMON BASIL PASTA
INGREDIENTS

½ pound spaghetti
2 cups sliced asparagus - sliced diagonally on a thin bias
½ cup Parmigiano Reggiano - grated - serve at the table
4 cloves garlic - sliced thin
salt - to taste
¼ teaspoon red pepper flakes - or to taste
Pasta water - reserve at least a cup
½ cup extra virgin olive oil - divided
1 lemon - zested and juiced
¼ cup basil - chiffonade or chopped

INSTRUCTIONS
1. Cook spaghetti to al dente in salted (2 tablespoons kosher salt) water. Reserve the pasta water.
2. Meanwhile slice the asparagus into thin slices on a diagonal bias.
3. Heat a large pan to medium-low and coat the pan with half the olive oil. Saute the garlic for 1 minute, then add the red pepper flakes and the asparagus. Cook for 1 minute longer until the asparagus just turns bright green. Remove the pan from the heat if the pasta is not close to done, otherwise move onto step 4 right away.
4. When the pasta is almost done cooking add a ladle of pasta water to the pan and turn heat to medium.
5. Add the al dente pasta to the pan and toss to coat. Season with a bit of salt and pepper. Add the lemon juice and lemon zest and toss to emulsify. If the pasta is too dry add a bit more pasta water and toss once more.
6. To finish, remove the pan from heat and add in the basil and a hefty drizzle of extra virgin olive oil. Taste test and make final adjustments to salt. Serve in bowls with a sprinkle of Parmigiano Reggiano cheese. Enjoy!
