ASPARAGUS AND MUSHROOM PASTA BOWL
I love the savory, cheesy, brothy-ness of this dish. The flavors come together to make this truly satisfying. Give this a try, I'd love to hear from you.
HOW TO MAKE ASPARAGUS AND MUSHROOM PASTA BOWL
Grocery List:
1 bunch of asparagus (you'll need 12 spears)
1 package white button mushrooms (you'll need 2 cups sliced)
3-4 ounces of your choice of pasta
Finely grated Parmesan or Ramona cheese from the refrigerator section of your grocery (you'll need 1/3 cup)
Fresh parsley (1/3 cup chopped)
1 medium sweet onion (1 cup chopped)
2 garlic cloves (minced)
Fresh Thyme (2 tsp chopped)
Red pepper flakes (1/2 tsp)
2 cups vegetable broth (2 cups)
Cook pasta according to direction, but a little more al dente than usual
Prepare 12 asparagus spears; snap off woody end and cut into thirds or bitesize pieces...set aside
Slice 2 cups of white button mushrooms...set aside
While your pasta is cooking, heat 2 Tbsp olive oil to 5 quart cooking pot, add asparagus...cook no longer than 2-3 minutes, remove from heat, place in bowl and set aside
Return pot to heat, add 2-3 Tbsp olive oil and add 1 cup chopped sweet onion and 2 minced garlic cloves. Saute 2-3 minutes
Add sliced mushrooms and cook 3-4 minutes
Add 2 cups of vegetable broth to mushrooms, 1 tsp salt, 1/2 tsp red pepper flakes, 2 tsp chopped thyme and 1/3 cup chopped parsley...stir to combine
Add 1/2 cup finely grated Parmesan or Ramona cheese (sift to remove any clumps)...mix well
Add 1/4 cup sour cream, but temper first. To temper, take 1/4 cup hot broth from pot and let it cool a bit. Add it to 1/4 cup sour cream, mix until smooth. (it will help to let your sour cream get to room temperature so it's not so cold)
Add sour cream mixture back to broth in pot and mix well.
Add your cooked pasta and stir to combine, bring to simmer to heat through, serve
