Carrot Loaf by Mai Goodness | Carrot Cupcake or Muffins | For Home Baking Business w/ Costing

Healthier version of a cake, loaf or cupcake but tastes so good with lots of carrots, nuts, orange zest and glazed fruits. The orange zest gives it good smell as well as the cinnamon powder.
Very easy to make and bake! Best for newbie in baking.

Carrot Cake - Carrot Loaf or Cupcake

Wet ingredients :
3/4 cup light brown sugar - P9.00
3/4 cup vegetable oil or canola oil - P16.50
2 large eggs - P15.00
1 tbsp vanilla extract or 1 tsp if using pure vanilla extract - P2.00
1 1/2 cup of grated carrots (2 medium size) drench in 2 tbsp flour - P15.00

Dry ingredients:
1 1/4 cup all purpose flour - P7.50
1/2 tsp baking soda - P1.00
1 1/2 tsp baking powder - P2.00
1/2 tsp iodized salt -P0.50
2 tsp cinnamon powder - P3.00
1 orange zest or 1/2 tsp nutmeg - P10.00
Toppings: P20.00

Toppings are optional:
You can choose 1 from these toppings or a combination:

- 1 cup glazed fruit (you can buy it in a baking store)
- 1 cup raisins
- 1 cup chopped walnuts
- 1 cup chopped almonds

Baking essentials you need:
1 loaf pan or cake pan (7x3 inches or 8x3 inches, makes two loaves)

Baking time:
180⁰C temp for 15 mins for cupcakes - using the middle and bottom rack of the oven. Switch positions after 10 minutes to avoid burning the bottom. No need to switch positions if you are only using the middle rack.

180⁰C for loaf pan 40 to 50 minutes or until the stick test comes out clean using the middle rack only
For cake pan, you can check after 30 mins.

The ingredients are listed according to the sequence of how you are going to mix it.

Double the measurements if you need to make more.

Overhead Cost (40% of ingredients costs for gas, elec, water, fare etc) - P39.40
Total Costing: P137.90
Yields - 2 loaves (7x3 inches or 8x3 inches loaf)
Net cost per loaf - P68.95 x 1.7 (tubo) = P117.20
Selling price per loaf - P120.00
