Breakfast Burrito Hack
YES the viral tortilla hack we can’t get enough of *can* be super SmartPoints-friendly! Watch and learn how to make the perfect breakfast tortilla:
𝗪𝐡𝐚𝐭 𝐲𝐨𝐮’𝐥𝐥 𝐧𝐞𝐞𝐝:
∙ 2½ oz burrito-size, low-carb flour tortilla (about 9½ inches)
∙ ¼ cup canned fat-free refried beans
∙ 1 large scrambled egg (made with cooking spray, salt, and pepper)
∙ 2 cherry tomatoes, diced
∙ 1 scallion, sliced
∙ ¼ cup shredded 50% reduced-fat sharp cheddar cheese
∙ ¼ cup cooked red pepper strips
∙ ¼ cup cooked onion strips
∙ Cooking spray
𝐇𝐨𝐰 𝐭𝐨 𝐦𝐚𝐤𝐞 𝐢𝐭:
1. Place tortilla on a work surface. Looking at it like a clock, cut from center to 6 o'clock. Spread beans in the lower left quadrant (from 6 to 9 o'clock). Place the scrambled egg on tortilla in upper left quadrant (from 9 to 12 o'clock) and top with tomatoes and scallions. Place the cheese on the upper right quadrant (from 12 to 3 o'clock). Place peppers and onions in lower right quadrant (from 3 to 6 o'clock). Fold tortilla clockwise by folding beans over egg, egg over cheese, and cheese over peppers and onions.
2. Coat a small nonstick skillet with cooking spray. Heat over medium. Add the folded tortilla to the skillet and cook until the tortilla is browned, the cheese is melted, and the fillings are heated through, 1 to 2 minutes per side.
Serving size: 1 tortilla
