How To Sfincione

In today's recipe we'll see how to make Sfincione. Sfincione dough is half pizza and half bread and it's topped with a generous amount of tomato and stewed onion sauce, anchovy filets, semi-hard cheese and breadcrumb and finished with a dash of oregano. Sfincione is translated "thick sponge" because of its bready consistency, it's easy to make, cheap and tasty.

For a 30x40 Pan:

Dough

400 gr All Purpose Flour
100 gr Semolina Flour
25 gr Olive Oil
15 gr Sugar
10 gr Salt
5gr Dry Yeast
275-325 ml Water

Sfincione Sauce and Toppings

800 gr San Marzano Tomatoes
2 big Red Onions
150 gr Provolone (substitute for Caciocavallo cheese)
30 gr Pecorino Cheese (substitute for Primo Sale cheese)
30gr Breadcrumbs
5-6 Anchovy Filets
Oregano

Sfincione is baked for 15 min at 240 C or 465 F.
