Shopping List:
1 lb Fingerling Potatoes (you can use any potatoes for this recipe)
Avocado Oil or Olive Oil
1 tbsp fresh rosemary
smoked paprika
chipotle chili powder
italian seasoning
salt, pepper, garlic, onion powder
truffle oil (optional)
parmesan cheese
chopped parsley

Directions:
Clean Potatoes and dry. Slice in half if using Fingerling, otherwise, chop into bite sized - equal - pieces. Add potatoes to a mixing bowl and coat in avocado oil. Season generously and then add chopped rosemary. Line baking sheet with foil and add a layer of cooking spray. Preheat oven to 400 degrees. Place potatoes face down onto baking sheet and bake for 10-15 minutes. Test for tenderness and color. Once color develops, flip the potatoes and continue baking until fork tender. Add layer of parmesan cheese during the final 5-10 minutes or until the cheese melts. Coat in thin layer of truffle oil and garnish with parsley.
