Tex/Mex Casserole
This casserole is best made the day before so the flavors can mingle. Bake at 325 degrees for 30 minutes or until bubbly.
Here are the ingredients:
12 corn tortillas
1/2 cup melted butter
Coat both sides of tortillas with melted butter and line 9" x 13" Pyrex pan
1 pound lean ground beef
1 medium onion, chopped
3 clove of garlic, rough chopped
3 ounces Jalapena peppers
1 - 15 ounce can black beans, drained and rinsed
1 - 15 ounce can diced petite tomatoes, drained
3 tablespoons chopped cilantro
1 -16 ounce carton sour cream
16 ounces Monterey Jack cheese, shredded or cut in blocks
16 ounces sharp cheddar cheese, shredded
