Amazake Whole Wheat Vegan Milk Bread
This is a vegan milk bread featuring amazake. Amazake is a delicious naturally sweet Japanese rice drink made with the power of koji rice which has Aspergillus oryzae mold in it. This powerful mold has a lot of amylases and proteases so when the koji rice is combined with cooked rice and water and fermented for 14 hours at 135°F the resulting drink is sweet and unctuous because the amylase has broken the starch down to sugars. The amazake was used in the tangzhong for this bread. Instead of dairy milk soy milk was used and instead of butter, toasted walnut oil was used. To replace eggs a gel made from crushed flax seed was used. The resulting bread is just so tender, nutty and subtly sweet. I hope you give this bread a try.
