Chicken Taco Soup Recipe
By Faith and Flour

1 Onion, diced
1Tbsp. Olive Oil
2 cups Chicken or Vegetable Stock
1 can Diced & Fire Roasted Tomatoes
1 can Corn (undrained)
1 can (4 oz.) Green Chilies
2-3 cans of beans (Black, Pinto and/or Kidney)
1 Tbsp. Chili Powder
1 tsp. Cumin
2 Chicken Breasts (frozen is fine!)

Sauté the onions in the olive oil until translucent. Add the onions and all other ingredients to the crockpot.
Set the crockpot on Low for 6 hours or High for 4 hours.
Remove the chicken breasts and shred with two forks.
Return to the crockpot and stir into the soup.
Top with avocados, cheese, sour cream or your family’s favorite toppings. Enjoy!
Serves 4-6

Instant Pot Creamy Turmeric Lentil Soup
by Faith and Flour

2 Tbsp Olive Oil
2 Onions, chopped
2 medium Carrots, chopped
1 tsp Garlic, finely chopped
1 tsp Ginger, finely chopped
1 can Coconut Milk
1 can Tomatoes, diced (fire roasted)
2 cups Vegetable Broth/Stock
2 tsp Salt
1/2 tsp Pepper
1 tsp Cumin
1 Tbsp Turmeric
1 cup Yellow Lentils, rinsed
1 Tbsp Lemon or Lime juice
2 Tbsp Maple Syrup, Honey or Agave Nectar

Set the Instant Pot to Sauté mode and sauté the olive oil, onions, carrots, garlic and ginger until onions are translucent.
Add the remaining ingredients (except the lemon or lime juice and sweetener) to the Instant Pot and set to Pressure Cook for 3 minutes.
Allow the Instant Pot to reduce pressure naturally (to reduce the chance of the contents escaping with a quick release).
Mix in the lemon or lime juice and sweetener.
Serve over rice & Enjoy!

Milk Rice Recipe
By Faith and Flour

8 cups Whole Milk
2 cups Jasmine Rice
1/4 tsp. Salt
1/4 cup Sugar
2 tsp. Vanilla

In a large sauce pan, bring the milk and salt to a low boil.
Add the rice and cook on low heat 20-30 minutes, until most of the milk is absorbed. It should be very thick and creamy.
Stir in the sugar and vanilla.
Spoon into bowls and sprinkle with cinnamon sugar.
Serve with peaches, pears, or fruit cocktail on the the side. Enjoy!
