Maria’s Pork Tenderloin Recipe:

Preheat oven to 425 degrees F.
Rub pork with olive oil, salt, pepper and a dash of garlic powder
Bake on a pan with sides and lined with aluminum foil until the pork reaches an internal temperature of 145 degrees F.
Allow the pork to rest for 10-15 before slicing.

Sauce:

1/3 cup Mayonnaise
1/3 cup Sour Cream
1/2 tsp Mustard Powder (or more to taste)
dash Cumin
2 Tbsp Cider Vinegar
1/4 cup of chopped Green Onions or Chives
Salt & Pepper to taste

Stir all ingredients together until well blended. Chill for at least 1/2 hour before serving.

Maria’s Sautéed Onion Rice Recipe:

1 cup Jasmine Rice
2 cups Water (1 cup for Instant Pot)
1 tsp Salt
1 tsp Garlic Powder
1 tsp Olive Oil
1 large Onion, thinly sliced
1 tsp Butter
1/2 tsp Garlic Powder
1 tsp honey

Combine the first 5 ingredients and cook either on the stovetop or in an Instant Pot.
In a separate pan, sauté the onions along with the butter on medium/low heat until the onions are tender.
Before the onions start to brown or caramelize, add the garlic powder and honey. Stir well and continue to cook on low heat until the onions are golden brown.
Serve the onions on top of the cooked rice.

Southern Green Beans Recipe:

1 small Onion, chopped
1 tsp Butter or Olive Oil
1 lb fresh or frozen (thawed) Green Beans , trimmed
2-3 Tbsp Balsamic, Red Wine or Cider Vinegar
2 tsp Sugar
Crumbled Bacon

Sauté the onions with the butter or oil on medium/high heat, covered, until they begin to soften.
Add the vinegar and sugar and continue to cook until the green beans are done and as soft as desired.
Stir in the crumbled bacon and cook another minute or two until warmed through.
