Discover Easy to Make Gnocchi di Malga! | Pasta Grannies

Is this Italy's most unusual gnocchi? Who has heard of it outside Verona? Gnocchi di Malga are also called gnocchi sbatùi and they came about because cow herders in the alpine pastures north of Verona used ingredients easily available to them: cheese and butter. The ingredient which makes these gnocchi extra special is smoked ricotta - do try and get hold of some if you want to try making this. And Claudia - our youngest granny ever! - shows us how to make them.

To make gnocchi for 4 people, use 500g plain flour, about 450ml water - add it gradually to form a thick batter. How much butter and cheese is up to you (quanto basta in Italian) but try 200g unsalted good quality butter, 50g each of smoked ricotta and Monte Veronese, Grano Padano or Parmigiano Reggiano cheese.
