【酥脆炸鸡】Crispy Fried Chicken
好吃的炸鸡,莫过于酥而不腻的外皮,和多汁鲜嫩的鸡肉。再加上油温的掌控得宜,这就能完美呈现酥脆的炸鸡。

在那么多食材当中,泡打粉扮演者酥脆的角色,此角色是重中之重!你是否曾看过有些做法是,加入了碳酸饮料?(如:Ice-cream Soda、Soda Water、甚至啤酒)其原理,也就是因为碳酸饮料当中含有的成份(碳酸、苏打)能在炸的过程中,在表皮产生气泡使之酥脆。在此视频,我们则用了泡打粉,这是比较经济实惠的做法。

以下稍微终结了一些重点与大家分享 :-

技巧与巧门
1. 在酥炸粉中加入发酵粉或称泡打粉 (Baking Powder)是让炸鸡酥脆的主要原因。不适用小苏打(Baking Soda)。
2. 在裹粉的过程中,鸡肉必须经过“浸水“(清水+泡打粉)再裹上第二层酥炸粉
3. 油温和油量的控制,必须掌控得宜。
4. 鸡肉必须在接近室温后,才能拿去炸。
5. 炸好后的鸡肉,需放在铁架上,利于散热,不易累积水气,从而造成受潮而软化。

【Crispy Fried Chicken】
The delicious fried chicken is crispy but not greasy, juicy and tender. Incorporated with the proper control of the oil temperature, this will perfectly present the crispy fried chicken.

Amongst so many ingredients, baking powder plays an important role which is the most critical part! Have you ever seen that there are some practices where carbonated drinks are added? (Such as Ice cream -Soda, Soda Water, and even beer) The principle is that the ingredients (carbonic acid, soda) contained in carbonated beverages can produce bubbles in the skin during the frying process to make it crispy. In this video, we used baking powder which is a more economical approach.

I have sum up some important points to share with you below:-

Crispy & Tender Fried Chicken MUST take "bath" before frying!

Tips & tricks
1. Adding baking powder to the seasoning flour is the main reason for crispy chicken. Not suitable for using Baking Soda
2. During the process of coating the seasoning flour, the chicken must be “dipping in water” (water + baking powder) before coating the 2nd layer of flour.
3. The oil temperature and volume of oil quantity must be controlled properly.
4. chicken must be tending to room temperature before it can be fried.
5. The fried chicken should be placed on the steel rack to facilitate heat dissipation, and it will not be easy to accumulate vapor, which will eventually “damping” the fried

腌渍鸡肉 Chicken Marinate
1)鸡肉 | Chicken - 1 公斤 | 1 Kg
2)白胡椒粉 | White Pepper Powder - 1 茶匙 | 1 Tsp
3)黑胡椒粉 | Black Pepper Powder- 1 茶匙 | 1 Tsp
4)盐 | Salt - 1/2 茶匙 | 1/2 Tsp
5)生姜 | Ginger - 6 片 | 6 pcs
酥炸粉 Seasoning Flour
1)木薯粉 | Tapioca Flour - 2 杯 | 1 Cup
2)中筋面粉 | All Purposed Flour - 1/2 杯 | 1/2 Cup
3)泡打粉 | Baking Powder - 1 茶匙 | 1 Tsp
4)白胡椒粉 | White Pepper Powder- 3 茶匙 | 3 Tsp
5)黑胡椒粉 | Black Pepper Powder - 2 茶匙 | 2 Tsp
6)盐 | Salt - 1 茶匙 | 1 Tsp
8)鸡精粉 | Chicken Stock Powder- 1 茶匙 | 1 Tsp
9)清水 | Water - 2 公升 + 1 茶匙泡打粉 | 2 Litre + 1 Tsp of Baking Powder
