Chocolate Fondant With Creme Chantilly (Chocolate Lava Cake) - baking for beginners

Today we will learn how to make a restaurant favourite, the chocolate fondant, this is essentially an undercooked chocolate cake which is what gives it the gooey center. This one is all about getting your cooking times right! if you over cook it then you will be left with a dry chocolate sponge with no liquid center. When cooked correctly, chocolate fondant is a perfect hot dessert.

Recipe:

chocolate fondant -
2 whole eggs
2 egg yolks
60g (1/4 cup) Caster sugar
100g (3 1/2 oz) Dark Chocolate
75g (1 stick + 1 tbsp) Butter
30g (1/4 cup) Plain flour
5g (1 tsp) vanilla extract

1tsp of melted butter and 1tsp of cocoa powder to coat the ramekins

creme chantilly -
200ml (1 cup) double/heavy cream
50g (1/4 cup) caster sugar
5ml (1 tsp) vanilla extract
