Dahi Parwal Recipe:

Ingredients:

250g Parwal (pointed gourd), peeled and slit

1 cup curd (yogurt), whisked

2 tbsp mustard oil (or any cooking oil)

2 green cardamom
1 inch cinnamon stick

1 bay leaf

1-2 dry red chilies

1 tsp ginger paste

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp red chili powder (optional)
1 tsp sugar ( optional
1 tsp garam masala
1 tsp ghee

Salt to taste

Fresh coriander leaves (for garnish)

Method:

Prep the Parwal: Wash, peel,

Fry the Parwal: Heat oil in a pan, lightly fry the parwal until golden and tender. Set aside.

Tempering: In the same oil, green cardamom, cinnamon stick, bay leaf, and dry red chilies. Let them crackle.

Spices: Add ginger paste, turmeric, coriander powder, and red chili powder. Sauté for a minute.

Add Yogurt: Lower the flame and add whisked curd slowly, stirring continuously to avoid curdling.

Cook the Gravy: Let it simmer for 2-3 minutes until the oil starts separating.

Add Parwal: Add fried parwal and salt. Cover and cook for 5–7 minutes till everything blends well.

Add sugar, garam masala and ghee

Finish: Garnish with fresh coriander and serve hot.

Serving Suggestion: Best enjoyed with steamed rice or roti.
