FULL DAY OF VEGAN BUDGET MEALS 💸 I easy and healthy 😋

4-ingredient pancakes.
-1/2 ripe banana
-1 cup (95g) oats
-1 TSP baking powder
-2/3 cup (160ml) plant milk
-150g frozen raspberries (defrosted as topping)
BLEND all ingredients and fry the pancakes
BBQ beans & mushrooms on toast
-1 onion
-2 cloves garlic
-200g mushrooms
-1 can (220g) beans or chickpeas
-3 TBSP BBQ sauce
-1/2 can (200g) chopped tomatoes
-1 TSP each salt, smoked paprika, cumin
-pepper to taste
-bread for serving
FRY onion, mushrooms and garlic, then add the remaining ingredients and let it simmer for 5-7min
Banana split:
-1 banana
-1 TSP (coconut) oil
-3 TBSP vegan yogurt
-toppings of your choice e.g. peanut butter, chocolate, frozen berries etc.
Classic lentil bolognese:
-1 onion
-2 cloves garlic
-2 carrots
-1 stalk celery
-1 cup (175g) red lentils
-3 TBSP tomato paste
-1 can (400g) chopped tomatoes
-3 cups (750ml) veg stock
-1 TSP each salt, dried Italian herbs, paprika
-pepper to taste
-as much pasta as you want (cooked separately
FRY onion, garlic, carrots and celery/ADD the remaining ingredients and let it simmer for 15-20mins/Serve with pasta
