[Eng sub] 香煎三文鱼和蜜汁冬菇 Pan Seared Salmon with Honey Glazed Shiitake

三文鱼有很多做法, 用这种煎的方法, 使三文鱼外脆里嫩, 再加上冬菇蜂蜜葱特有的香味, 非常美味,同时操作也十分简单。
材料1:

1 磅三文鱼(一切二)
3 汤匙菜油
一点点盐
一些黑胡椒粉
材料2:

8 朵冬菇
3汤匙橄榄油
3汤匙淡酱油
2汤匙蜂蜜
几滴芝麻油
1根葱
做法:

冬菇 切条,葱 切丝,把 葱 丝放入冰水中,待用
三文鱼用厨房纸擦干水份,撒上盐和黑胡椒粉
锅烧热,加3 汤匙菜油,有里朝外放入三文鱼,这样油不会溅到你
不要挪动三文鱼,煎大约4分钟,你可以调节火候
大约4分钟你可以看到鱼肉发白,鱼的底部四周有金黄色
这时把三文鱼翻个身,再 煎大约4分钟
确定有没有熟, 用温度计插入到鱼的最厚部分,达到140F/ 60C, 三文鱼就好了。
现在来炒冬菇,锅烧热,加3 汤匙橄榄油,放入 切好的冬菇
翻炒一分钟,加3汤匙淡酱油,2汤匙蜂蜜,继续翻炒
最好加入几滴芝麻油,继续翻炒1分钟。
最后把炒好的冬菇放在三文鱼上面,在从冰水中取出葱 丝,挤干水分,堆在冬菇上。美味的三文鱼就好了!
There are many recipes for salmon. With this pan seared recipe, the salmon is crispy outside and tender inside. Adding the honey glazed shiitake mushrooms and the green onion makes the dish rich in flavor and balanced in taste, and yet very simple to make.

Ingredients

1 pound of salmon (cut 2 pieces)
3 tbsp vegetable oil
a pinch of salt
Some black pepper powder
8 shiitake mushrooms
3 tbsp olive oil
3 tbsp light soy sauce
2 tbsp honey
a few drops of sesame oil
1 green onion
Recipe:

Slice the shiitake mushrooms, slice the green onion, put the sliced green onion in ice water, set aside.
Dry the Salmon completely with paper towels and sprinkle a pinch of salt and some fresh ground black pepper.
Add 3 tbsp of vegetable oil to a frying pan and bring to high temperature, Put the salmon into frying pan, when you put salmon in, in a motion away from you, so that the oil won't splash on you.
Don't move the salmon. Let fry for about 4 minutes. You can adjust the heat if needed. After about 4 minutes check whether the salmon is turning opaque, and the bottom turns golden. At this time, turn the salmon over and fry for another 4 minutes.
Insert the thermometer into the thickest part of the salmon to determine if cooking is done. You should measure about 140F/ 60C. The salmon is ready.
Now cook the shiitake mushrooms. Heat 3 tbsp of olive oil in a frying pan. Add the sliced shiitake mushrooms.
Stir fry about one minute, add 3 tbsp light soy sauce, 2 tbsp honey, continue to stir fry. Lastly, add a few drops of sesame oil and continue stir-frying for one minute.
Finally, put the fried shiitake mushrooms on the top of the salmon, take the sliced green onion from the ice water, squeeze the water, and pile on top of the shiitake mushrooms. Enjoy!
