Vegetarian Vietnam Netted Spring Rolls

素越南网春卷

Yield : 16 Spring rolls 16个

Ingredients 材料：
Spring roll skin 春卷皮

150g Rice flour 150克粘米粉
15g Wheat starch 15克澄粉
15g Tapioca starch 15克木薯粉
40g Sugar 40克白糖
2g Salt 1/4tsp. 两克盐 1/4茶匙
2 tsp Vegetable oil. 两茶匙油
1 and 1/2 Tbsp egg white 1汤匙半蛋白（蛋清）
160ml water. 水160毫升
50ml boiling water (3 &1/2 tbsp)沸水50毫升（3汤匙半）

Filling 馅料：
180g Glutinous rice cake (Nian Gao) 年糕180克
300g Purple sweet potatoes 紫薯300克
Sugar 1 & half tsp 细砂糖 1 茶匙半
Dash of salt 盐少许
