LOW CARB Grilled Cheese Made With What?! 😱 GLUTEN FREE!
Taking one of your favorite comfort foods the Grilled Cheese and making it Gluten Free! We are using spaghetti squash to sub for bread!
Directions:
Cut Spaghetti Squash Lengthwise and microwave for 20 mins. Clean squash out using a fork (dispose of seeds)
Using a cheese cloth or paper towels, dry out the squash by squeezing out as much water as you can.
In a mixing bowl add to squash, italian herbs 1/2 tsp, 1/2 tsp garlic powder, and 2 whole eggs.
Add 1/3 cup parmigiano reggiano (I used shredded but can also use grated)
Spray and heat waffle maker (if you don't have one you can make on the stove top)
Pour half of the mix on the waffle maker and cook about 3-5 mins or until toasty.
Open up the waffle maker and add to one side a sprinkle of mozz cheese, then flip the other half of the waffle over the cheese, close the waffle maker and cook for a few more mins.
This recipe makes 2 spaghetti squash grilled cheese!
Service with a side of marinara for dipping or your favorite soup!
