Kitchari - Guyanese Kitchri - Trini Split Peas Rice #GAILcookup Indian Khichri

Kitchari (also called khichdi or khichri) is a one-pot dish usually made with yellow split peas, rice, and spices. It is a simple vegetarian meal and often used when fasting.

Ingredients:
1 cup basmati rice
1/2 cup yellow split peas (half-cooked)
1 cup coconut milk
3 cups water
1 tablespoon coconut oil
1 onion, diced
3 garlic cloves, minced
1 tablespoon grated ginger
2 stems of green onions, chopped
1 wiri wiri pepper
1 teaspoon turmeric
1 teaspoon ground cumin
1 tablespoon dried thyme
1 teaspoon salt
1 teaspoon black pepper
1 cup chopped poi bhaji (or spinach) or diced carrots
Preparation:
1. Soak 1/2 cup of yellow split peas in 1 cup of water for 6-12 hours (preferable overnight).
2. Drain water and cook 1/2 cup of yellow split peas in 3 cups of boiling in water under medium heat until half-cooked (about 45 minutes). Do not cover the pot and place spoon in pot to avoid boiling over.
2. Heat coconut oil over medium heat. Add onion, garlic, ginger, green onions and pepper and stir for one minute.
3. Add half-cooked yellow split peas, rice, turmeric, cumin, thyme, salt and black pepper.
4. Stir to coat rice and peas mixture with the spices.
5. Add the coconut milk, water and vegetable to the rice and bean mixture and bring to a boil.
6. Lower the heat to a low simmer and cook covered for 15 to 20 minutes. Check & stir every 5 minutes.
