Classic Sugar Cookies

I came across some old aluminum cookie cutters that were not Christmas themed at a church rummage sale. It got me thinking about sugar cookies and how we only make them during the holidays - but they should be in regular rotation with all the other cookies we make throughout the year. Here's the simple recipe I use:

2/3 cup butter, softened
3/4 cup sugar
1 tsp vanilla
1 egg
4 tsp milk
2 cups flour
1 1/2 tsp baking powder
1/4 tsp salt

It's best to use a stand or hand-held electric mixer for this recipe.

Using a large bowl, cream together butter, sugar and vanilla. Add egg and beat until fluffy. Add milk and beat in.

Sift together the flour, baking powder and salt. Gradually add dry ingredients to the creamed mixture and mix until well combined. Remove dough from bowl and cut in half. Wrap each half in plastic wrap and refrigerate for 1 hour, or more.

Roll dough out on lightly floured surface until about 1/8 inch thick. Cut into shapes with cutters. Transfer to parchment paper lined baking tray. Top with colored sugar or sprinkles, if desired. Bake 8-10 minutes at 375 degrees until the edges of cookies turn lightly golden. Remove from oven and transfer to cooling rack.

You can also decorate cookies with an icing after they have cooled.
