POTATO AU GRATIN

I love potato au gratin! I used to eat a lot before I became a vegan, this is the first time I tried the vegan version. It turned out pretty good! if you guys try the recipe, let me know in the comments what you think.

Ingredients:
6 medium russet potatoes ( peeled and thinly sliced )
2 1/2 cups unsweetened almond milk
4 tbsp vegan butter
3 garlic cloves ( minced )
3 tbsp all purpose flour ( or use cornstarch for gluten free )
1 cup vegan cheddar cheese
1/3 cup vegan Parmesan cheese
1/2 yellow onion ( diced )
1/3 cup nutritional yeast
1 1/2 tsp salt
1 tbsp dried parsley ( and a pinch to top )
1 tsp thyme
1/2 tbsp paprika
1/4 tsp black pepper
1 vegetable bouillon cube

Notes: the potatoes need to be really thin, if not they will take longer to cook.
