Gurgaon winters ❄️ + late nights after work 😅 = this warm, comforting vegetable thukpa bowl 🍲.
Made with leftover noodles, oyster mushrooms, bok choy, and veggies — simple, cozy, and perfect for midnight cravings 🤍

Ingredients

• Wheat Noodles (boiled)
• Oyster mushrooms (boiled 3–4 mins with salt)
• Bok choy
• Onion, tomato
• Garlic, ginger, green chilli
• Broccoli, capsicum, button mushrooms
• Olive oil
• Salt & black pepper
• Soy sauce, vinegar
• Sriracha / chilli sauce
• Coriander & spring onion
Steps

1. Sauté garlic, ginger & green chilli in olive oil.
2. Add onion, tomato & coriander stems.
3. Season with salt, pepper, soy sauce, vinegar & sriracha.
4. Add water and boil for 5 mins.
5. Add mushrooms, broccoli & capsicum.
6. Add bok choy and simmer for 5 mins.
7. Add noodles to a bowl and pour hot soup.
8. Garnish with spring onion & coriander. Serve warm.
