Chef Franks learns how to make HOMEMADE FUDGE

I love fudge. In this video Chef Tracy continues my candy education. It was much easier than I thought it would be. Turns out the hardest thing was waiting for it to cool so I could eat it.

Fudge
Makes one 8 X 8 tray

28 g cocoa powder
790 g sugar
212 g whole milk
200 g dark chocolate (61%)
65 g butter
70 g light corn syrup
14 g vanillas extract
170 g pretzels
1 hand-full mini marshmallows for garnish

Line a 8 x 8 pan with aluminum foil & grease.
In a sauce pan combine sugar, milk, butter & stir to combine
Add the cocoa powder & chocolate
Turn the heat on medium high & stir until the mixture comes to a boil, then lower to a simmer
Cook until the mixture hits 238 degrees F/114 degrees C
Pour fudge into a bowl & add the vanilla. Stir for 5-8 minutes until the fudge starts to thicken
Add the pretzels. Pour into the prepared pan & top with marshmallows
Let cool for at least 12 hours
