The Most Addictive Abura Soba (Brothless Ramen)
I'm in my 40's now, so I should be eating healthier. But this fatty, salty, carb-filled Japanese noodle dish called the Chashu Abura Soba (brothless ramen) is too addictive.
[Chashu (Japanese marinated pork) Ingredients]
Block of pork butt or belly
Enough water to fill a pot
Bundle of green onions (top green part)
3 to 4 cloves of crushed garlic
Block of sliced ginger
1. Tenderize block of pork butt or belly.
2. Put into pot along with all the ingredients above.
3. Bring to a boil, scoop out the foam. Turn down the heat to medium.
4. Partially cover with aluminum foil, simmer for about 2 hours. Add more water if needed.
5. Gently take out the pork, filter out the broth.
6. Extract about 500 to 700ml of the porky broth.
[Chashu Marinade Ingredients]
500 to 700ml of porky broth
250ml soy sauce
100ml mirin & sake
30g sugar
1. Combine porky broth with the ingredients above.
2. Bring to a light boil, turn off the heat.
3. Put in the pork (and boiled eggs), cover it up, put into fridge overnight.
4. Sear all sides, add some of the marinade and glaze.
5. Cut into desired thickness, optionally torch it up to get it greasy.
[Sauce Ingredients]
2 to 3 cloves of chopped garlic
1 tbsp sesame oil
1 tbsp lard
2 tbsp dashi soy sauce
1 tsp oyster sauce
1 tsp chicken stock paste
1. Add chopped garlic onto butter pan.
2. Add sesame oil, lighly heat it up for a bit until garlic is lightly brown.
3. Add lard, melt it up.
4. Add dashi soy sauce, oyster sauce, chicken stock paste.
5. Stir and heat for a little bit, make sure garlic does not get burnt.
[Other Ingredients]
1 to 1.5 packed of ramen noodles (get thicker noodles if you can)
1/2 bundle of chopped up green onions (bottom white part)
Desired amount of chashu
Boiled eggs (optional topping)
2 sliced naruto/kamaboko (optional topping)
Menma (optional topping)
1. Add sauce into bowl along with chopped green onions.
2. Cook ramen noodles, put into bowl and mix with the sauce.
3. Add chashu along with optional toppings.
