How to Make Ukrainian Pampushky (doughnuts)
Another popular pastry during the Christmas season is pampushky.
These delicious morsel of fried dough can have a variety of fillings such as prune, plums etc., however in this video I used poppyseed (mak). We had every intention of grinding our own mak, however we were not able to find mak here in Vancouver. We used poppyseed in a can from a local Polish Bakery.
Recipe is from Savella Stechishin's Tradtional Ukrainian Cookery:
Rich Basic Sweet Dough
2 tsp sugar
1/3 cup lukewarm water
2 packages dry granular yeast (traditional, not instead)
3/4 scalded milk, lukewarm
3/4 cup flour
1/2 butter
1/2 sugar
2 whole eggs
3 to 4 egg yolks
1 tsp salt
1 tsp vanilla
grated rind of 1 lemon
4.5 to 5 cups sifted flour
