The Best Pumpkin Cake with Cream Cheese Icing

Hey folks, Join me in our homestead kitchen as I prepare a wonderful tasting cake. This cake is good any time of the year but has always went well at family gatherings. This holiday season try something a little different with this pumpkin cake with cream cheese icing. I hope you love it as much as we do./ Josie

Recipe: Pumpkin Cake With Cream Cheese Icing

4 eggs
1 2/3 cup sugar
1 cup oil
1 small can pumpkin or 2 cups
2 cups all purpose flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. soda

Beat together eggs, sugar, oil and pumpkin. Sift dry ingredients and add to pumpkin mixture, mixing thoroughly. Spread batter onto ungreased cookie sheet or 2 cake pans. Bake at 350 for 25-30 minutes.

Frosting: (this is a single batch. I double it for a layer cake)
8 oz. cream cheese - softened
3 T. butter softened
1 tsp. vanilla
2 cups powdered sugar

Cream together butter, vanilla and cream cheese. Slowly add powdered sugar and beat until creamy.
