Let's explore Reganmian, the iconic noodles of Wuhan, Hubei. Chris and Steph from Chinese Cooking Demystified help me to learn about the dish and its city of origin. Many only know of Wuhan in connection to the coronavirus outbreak, and I'd like to change that.

2 tsp Sichuan peppercorns
1 tsp cumin
1/2 stick cinnamon
3 pieces star anis
2 bay leaves
3 cloves
2 pieces black cardamom
1-2 pieces dried orange peel
2 Tbsp brown sugar

1/2 tsp msg

1/2 cup Tbsp black sesame paste or tahini
1 Tbsp water or lushui
1 Tbsp toasted sesame oil
1 Tbsp chili oil
1 Tbsp light soy sauce
1/2 Tbsp dark soy sauce
1 tsp 5 spice powder
1/2 tsp white pepper
1/2 tsp msg
