► Preposterous Suancaiyu Recipe
200g semi-frozen cod filets
1 Tbsp corn starch
1 egg white
1/2 tsp salt
1/2 tsp sugar
1/2 tsp white pepper
1 nest sweet potato noodles
tofu sheets, to taste
handful or more mung bean sprouts
50g mayo
1 Tbsp fish sauce
1 Tbsp Chinese cooking wine
1l water
3 thin slices of ginger
3 Tbsp oil
whites of 2 scalliones
2 cloves of garlic, minced
equal amount of grated ginger
1 pack preserved mustard greens , minced(70g)
2-3 pickled green peppers, minced
chili crisp
greens of 2 scallions
cilantro
► Suancaiyu Fried Fish Sandwich
200g white cabbage + carrots, shredded
1 pack preserved mustard greens , minced(70g)
1/2 tsp salt
50g or up to 100g mayo
3 Tbsp chili crisp, with some oil
brioche buns
mayo
cilantro + scallions, minced (for garnish)
1 cup flour
1/2 cup cornstarch
1 tsp baking powder
1 tsp salt
2 tsp white pepper
2 Tbsp green sichuan pepper, ground
250ml beer
1 cup flour
oil for frying
