► Mala Xiang Guo Base Recipe (麻辣香锅) 🌶️💥

3/4 cup neutral oil
1,5 Tbsp Sichuan pepper
5 slices of ginger
2 tsp fennel seeds
3 pieces star anise
1 stick of cinnamon
2 bay leaves
1/2 cup chili flakes, deseeded

1 onion, sliced
1/2 cup toasted peanuts
5-10 cloves of garlic
1/2 cup dried or fresh chilis
1/2 Tbsp fermented chili + bean paste (Doubanjiang)
1/2 Tbsp sugar
1/2 tsp salt
1/2 tsp msg
1/2 Tbsp light soy sauce
1/2 Tbsp dark soy sauce

1 Tbsp toasted sesame seeds
handful of fresh coriander

25ml Ming River Baijiu
25ml Dark Rum
30ml fresh lime juice
20ml simple syrup
2 Tbsp Sichuan pepper
