The Microbiology of Your Sourdough Starter - Ask a Microbiologist

We are chatting with Elizabeth Landis, a Sourdough Microbiologist who analysed more than 500 different sourdough starters. In her field of science she specifically analysed variations in dough rise rates and aromas. We want to find out more and understand the magic that happens behind the scenes.
