How to Tell When Brisket is Done

This video is my method of cooking hot & fast beef brisket using my offset smoker. In this video I demonstrate how to determine when your brisket is done for the perfect tenderness.

This offset smoker brisket recipe cooked this beef brisket in 6 hours. By running the offset smoker a little bit hotter (275 deg F), you can cut the total cooking time for bbq beef brisket almost in half.

In this video, I also show you another trick to keeping moisture in your brisket. Don't throw away those drippings if you wrap in foil. Instead save them and pour them into a fat separator and pour the au jus over top of your brisket when done, without pouring the rendered fat back into the finished meat.
