Pumpkin Chocolate Chip Bread
A delicious fall sweet bread. The chocolate chips make it extra special. Good with coffee or hot chocolate. I'm sure you're going to love it!
Chocolate Chip Pumpkin Bread Recipe
⦁ YIELD: 32 servings
⦁ Ingredients
⦁ 3 cups all-purpose flour
⦁ 2 teaspoons ground cinnamon
⦁ 1 teaspoon salt
⦁ 1 teaspoon baking soda
⦁ 4 large eggs
⦁ 2 cups sugar (I used 1 cup brown sugar & 1 cup white granulated white sugar)
⦁ 2 cups canned pumpkin-not pumpkin pie filling but pure pumpkin
⦁ 1 cup canola or vegetable oil
⦁ 1 tsp. vanilla
⦁ 1/4 to 1/2 tsp. all spice (optional)
1/4 to 1/2 tsp. nutmeg (optional)
1/2 cup raisins (optional)
⦁ 1-1/2 cups (6 ounces) semisweet chocolate chips
⦁ Directions
⦁ 1. In a large bowl, combine the flour, cinnamon, salt and baking soda and other spices. In another bowl, beat the eggs, sugar, pumpkin and oil. Stir into dry ingredients just until moistened. Fold in chocolate chips.
⦁ 2. Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 loaves (16 slices each).
⦁ If using 5 x 3 mini loaf pans, bake approx. 45 to 55 minutes
