Kale & Meatball Soup

Kale & Meatball Soup. Hearty & delicious. Easy and quick to make, so wonderful on a cool fall day. I know you're going to love this soup!
4 slices bacon cut in small strips
1-1/2 to 2 cups chopped onions
1-1/2 tbsp. fresh garlic, chopped fine
1/2 tsp. cayenne pepper
1/2 tsp. lemon pepper seasoning
2-1/2 tblsp. chicken broth base (powdered type)
4 cups chicken broth
4 cups water
1 or 2 cans of navy beans with juice
1 lb. of frozen meatballs
1/2 or 8 oz of chopped kale
Lightly cook bacon to render fat (and flavor)
add the onions and cook till translucent
add the chopped garlic & cook about 5 minutes to gain the flavor
add the chicken stock & water
add the chicken base, cayenne pepper and lemon pepper seasoning
let these cook 5 to 10 minutes to marry the flavors..taste along the way & season to your liking.
Add the meatballs and kale, give it a stir and let it all simmer 25 to 30 minutes.
