INGREDIENTS - BEEF PREPARATION:
* 3 Lbs boneless beef shank
* 1 large red onion chopped
* 1 tsp garlic paste / 4 cloves minced
* 1 tbsp ginger paste
* 1 habanero chili
* 1 tsp salt
* 1/2 tsp black pepper (crushed)
* 1 bay leaf

INGREDIENTS -JOLLOF PREPARATION:

* 6 cups jasmine rice washed
* 2 tomatoes
* 3 red bell peppers roasted
* 2 large red onions chopped
* 1/2 tbsp ghee or butter or cold pressed coconut oil (optional)
* Broth from beef
* 1 tsp curry
* 1/2 tsp herb blend (equal parts rosemary, sage, thyme, oregano)
* 3-4 cups beef broth (substitute with water)
* Oil for browning beef ( 1 cup avocado oil)
* salt to taste
