👀What LOW-CARB Eating Looks Like For Me | Low-Carb For Me--Regular-Carb For My Family | Country Cook

Today I'm sharing a week of low-carb eating for me and how I still cook regular carb foods for my family. I try to keep it as simple as possible. Oh, and Joe surprises me a good one in the kitchen today.

Cheesy Cauliflower Mock Mac 'n Cheese
1 large head cauliflower chopped
4 oz. cream cheese
1/3 cup heavy cream
1 tsp. kosher salt
1/8 tsp. cayenne pepper
1 tsp. paprika
2 cups shredded cheese
Cook cauliflower in salted boiling water 4 minutes. Drain. In same pot combine cream cheese, cream and spices. Cook until smooth. Stir in cheese and fold in cauliflower. Serve up with bacon bits and parsley flakes. This was so good.
