INGREDIENTS FOR DOUGH:
* Egg Yolks (4)
* Egg Whites (4)
* Salt (1/2 tsp.) or to taste
* Powdered Sweetener (45-50g.) I used powdered erythritol
* Cocoa Powder (1 tbsp.)
* Coconut Flour (1/3 cup or 35g. or 5 tbsp.)
* Vanilla Extract (1/2 tsp.)
* Melted Butter (4 tbsp. or 60g.)
* Baking Powder (4 tsp. or 15g.)

INGREDIENTS FOR CREAM:
* Unflavored Gelatin (1 tbsp. or 7g.)
* Heavy Whip Cream (1 cup/ 250ml.)
* Powdered Erythritol (3 tbsp.) or sweetener of your choice

TIP 1: Powdered sweetener dissolves faster and easier. It is best for mixing with whipped egg whites, where preserving the volume and fluffiness is essential.
TIP 2: Put a toothpick into the thickest part of the cake. If the toothpick comes out clean, the cake is baked through.
TIP 3: Heavy cream must be well chilled before whipping.
