These chicken tacos are crispy, stuffed with cheese, spicy juicy chicken and fresh vegetables. I love to make extra sauce to dip those tacos into! There is plenty of sauce reserved with this recipe, so feel free to freeze and use for future taco nights for a speedy delicious meal...
Ingredients: spice mix for chicken. Use 1/2 for chicken, leftover will be used for the sauce!

500g chicken breast
Salt and pepper to taste
Juice from 1 lemon
1 TBSP olive oil
1 and 1/2 TBSP Tajín (a citrusy, spicy mexican spice blend. If you can't find this, use plenty of lime and chilli flakes instead)
2 TSP garlic powder
2 TSP onion powder
2 TSP cumin powder
3 TSP paprika
2 TSP dry parsley
1 TSP oregano
1 TSP chilli flakes

Sauce:
3 roasted peppers
1 roasted onion
7-8 garlic cloves
250ml vegetable stock
2 TSP chilli paste (I used Harissa)
400g tinned plum tomatoes
Tips:
Serve cheesy chicken tacos filled with diced onions, jalapeños, tomato, coriander and sour cream if you wish!
You don't have to add as much chilli if you don't want it to be spicy
