Sesame Chicken Recipe - Restaurant Style- Lockdown Cooking Series Video #1
Sesame chicken was definitely the most popular dish we served at the Dragon House Restaurant. Our family restaurant was opened 1972-2017. I was responsible for making the sauce over the years. We would go through 5 gallons per week!!! Now you will be able make your very own sesame chicken.
Batter ingredients:
1 Egg
1 Cup (125 g) All– purpose Flour
1/2 Cup (65 g) Corn Starch
1/4 Teaspoon (4.8 g) Baking Powder
1/4 Teaspoon (4.8 g) Baking Soda
1/4 Cup (60 ml) Vegetable Oil
1 Cup (235 ml) Water
Sauce Ingredients:
1 Tablespoon (14.8 ml) Minced Ginger
1 Tablespoon (14.8 ml) Minced garlic
4 Cups (946 ml) Hot Water
1 Cup (201 g) Sugar
3 Fl. Oz (89 ml) White Vinegar
4 Fl. Oz (118 ml) Kikkoman Soy Sauce
1 Cup (128 ml) Tomato Ketchup
1/2 Teaspoon (2.5 ml) Sesame Oil
Hot Pepper Oil to taste
Sesame seeds
Instructions:
1. Combine and mix all batter ingredients well. Consistency should be similar to thin pancake batter.
2. Combine and mix all sauce ingredients well. Making sure the sugar is thoroughly dissolved.
3. Cut chicken into small bite-size pieces.
4. Lightly salt chicken.
5. Heat oil to 375° F (190° C)
6. Lightly coat chicken (or any protein) with flour.
7. Dip chicken into batter and deep fry till golden brown.
8. Bring sauce to a boil and thicken with corn starch/water.
9. Mix in chicken.
10. Top with toasted sesame seeds and serve over lettuce or rice.
Serves 2-3
