Orange Chicken- Lockdown Cooking Series Video #7
Today is April 22, 2020. We're into our 5th week of the state mandated quarantine! If you're bored out of your mind, you're not alone. Let cook some more yummy dishes. Today's lesson is the delicious and a bit decadent orange chicken. This dish was originated in the Hunan Province of China but was not deep fried and had orange or tangerine peels mixed in. The version I am showing you today is the American version with a thin batter with a bit sweeter sauce. OK let's get woking!!!'
Orange Chicken Recipe
Ingredients for sauce:
3 Tablespoons (44ml) Orange juice
2 Tablespoons (30ml) Pineapple juice
4 Tablespoons (59ml) Sugar
3 Tablespoons (44ml) Vinegar
3 Tablespoons (44ml) Tomato ketchup
1 Tablespoon (15ml) Hoisin sauce
2 Tablespoons (30ml) Kikkoman soy sauce
Dash dark soy sauce
Dash sesame oil
1/8 Teaspoon (0.62ml) White pepper powder
1 Cup (236ml) Water
¼ Teaspoon (1.23ml) Minced ginger and garlic (cook first)
Corn starch to thicken sauce
Hot pepper oil to taste
Ingredients for batter:
1 Egg
¼ Cup (59ml) Flour
½ Cup (118ml) Corn Starch
1/8 Teaspoon (0.62ml) Baking soda
1/8 Teaspoon (0.62ml) Baking powder
¼ Cup (59ml) Vegetable oil
¼ Cup (59ml) Water
Additional ingredients:
18 oz (510g) or 4 Chicken thigh meat (cut small chunks)
1 Tablespoon (15ml) Toasted sesame seeds (optional)
Directions:
1. To make sauce- Heat wok and add ½ tablespoon oil. Put in ginger and garlic and cook for 30 seconds. Put all sauce ingredients in a wok and bring to a boil. Slowly add corn starch and water mixture to thicken. Set aside.
2. Lightly salt chicken and set aside.
3. Combine and mix batter ingredients thoroughly to the consistency of thin pancake batter.
4. Heat oil to 375°F (196°C)
4. Lightly coat chicken pieces with flour.
5. Dip chicken into batter and carefully put into oil.
6. Deep fry small batches at a time until golden brown.
7. Optional: Deep fry the second time for extra crispy.
8. Mix sauce with chicken. Add in hot pepper oil to taste.
9. Top with toasted sesame seeds and serve.
Serves 2-3
