A New Technique You Should Know About!

Mixing oil and water is possible, all without the need for emulsifiers, additives, or expensive equipment. Instead, we’ll use a technique that was recently developed by Iain McPherson, and it’s called Densing. Densing uses a vacuum blender to combine spirits, liqueurs, and even batched cocktails with fats to give them more texture and flavor, but it does a lot more! Densing is faster and cheaper than fat washing, making it a great option for bars, especially as the ingredients made using this technique can stay mixed for weeks or even months. So let’s test out a few applications of Densing, including how it holds up when mixed with other ingredients to create amazing drinks, from stirred to shaken. It’s Cocktail Time!
