Hey Ghouls n Goblins!! We are back in the spooky kitchen and today we're making meatloaf skulls with mashed potato brains!!! So excited about how this one turned out!! This recipe is both vegan and gluten free, but feel free too make adjustments to fit your lifestyle!!

Skull Impossible Meatloaf w. Mashed Potato Brains
Makes 2 Skulls

Ingredients
Meatloaf
1 package Impossible ground beef or ground beef/alternative of choice (makes 2 skulls)
¼ c breadcrumbs (use GF breadcrumbs if making GF)
2 tbsp ketchup - or tomato sauce
1 tsp Sriracha
1 tsp garlic powder
1 tsp vegan Worcestershire sauce
1 tsp onion powder
½ tsp parsley (or 1/4 tsp semi dried)
Salt and pepper to taste

Glaze

3/4 c. Ketchup
2 Tbsp brown sugar
1.5 tsp white vinegar
1 tsp Worcestershire sauce
1 tsp sriracha or add more for more spice (optional)
1 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste

Instructions
1. Preheat oven to 350°F. Spray you skulls or spooky mold with non-stick spray.
2. Prepare mashed potatoes using your preferred method. I used flaked mashed potatoes from Bob’s Red Mill (cooked per instructions), Earth Balance vegan butter, sautéed garlic, chopped chives, vegan Daiya Cheese, vegan Tofutti sour cream, salt and pepper. Set potatoes aside.
3. In a bowl, mix all ingredients together with a spatula - impossible burger, sriracha, breadcrumbs, ketchup, garlic powder, vegan Worcestershire sauce, onion powder, parsley, salt, and pepper.
4. Slowly add the meatloaf mixture to the skulls, pressing the meat mix down into the mold firmly to make sure you get the details you’ll want in the end. Make sure you leave enough room for the mashed potato filling.
5. Fill skull with mashed potato filling (not too full since you’ll need to seal it). Top with cheese (optional).
6. Press a patty of left over meat mix into the palm of your hand, forming a meat panel, and place it over top and seal all the meat together by pinching the edges so none of the filling runs out.
7. Bake for 20-30 minutes or until golden brown.
8. Prepare your glaze by mixing all glaze ingredients together in a bowl.
9. Remove skulls from oven, cover with glaze and place back in the oven for 5-10 min or until the glaze looks glazed/caramelized.
10. Remove from oven, allow to cool, and enjoy!
