Fillings

Spinach Artichoke Pizza Pocket
Ingredients
1/2c frozen spinach, thawed with liquid pressed out (I buy one block of it)
1/2c canned artichokes drained
about 1/2c mayonnaise (I used Original Vegenaise for vegan option)
1/2c mozzarella cheese or however much or little cheese you prefer (I used Daiya Mozzarella Shreds for vegan option)
Garlic Powder to taste
Onion Powder to taste
Pepper to taste
Butter for basting crust (I used Earth Balance butter for vegan option)

Steps:
Preheat oven to 375 degrees Fahrenheit
Prepare crust if using a homemade crust. Separate crust into 4-6 equal chunks. Set aside in bowl with damp towel draped over top so it doesn't dry out.

For spinach and artichoke filling:
Add artichokes and spinach (make sure you squeezed/pressed/strained all the liquid out) to a medium sized bowl. Add mayo one tablespoon at a time until desired creaminess is reached. Add Mozzarella cheese and stir to combine. Add garlic powder, onion powder, and pepper to taste and stir to combine. Set aside.

For Original Pizza Pockets Filling (feel free to use your favorite ingredients. I'm just leaving what I used for reference)
1 can sliced black olives (you can also buy whole and slice them yourself)
1/2 cup thinly sliced mushrooms
1 bag mozzarella cheese (I used Daiya Mozzarella Shreds for vegan option)
1 24oz jar marinara sauce

Spray or coat baking pan with oil, butter, or non stick spray. Set aside.
Roll out each chunk of crust and "shimmy" them into the mold (whether you're using tombstones or skulls or whatever shape you're using). Make sure the crust is pressed into the nooks and crannies. Also make sure to fix any holes by pressing the dough back together.
For spinach artichoke version: Spoon in the spinach and artichoke filling and press it down into the the pan. Top with mozzarella cheese (about 1 tbsp). Try not to overfill.
For original pizza filling: Sprinkle a layer of cheese (1-2tbsp), a layer of sauce (1tbsp), toppings, another layer of sauce (1tbsp), and another layer of cheese (1-2 tbsp). The amount of layers will depend on how deep your pan is. Add more or less as needed. Try not to overfill.
Fold all sides of the crust towards the center and tear away any extra "skin" or crust and put it back in the bowl to reuse for the other tombstones. Try the best you can to blend the crust together in the center or pinch it together to seal in the filling. You can add a "cheese seal" just in case haha!
Repeat the process on all the other tombstones or shapes.
Melt 2 Tbsp butter in microwave until melted. Mix in some powdered garlic to taste and stir to combine.
Brush the butter and garlic mixture over the top of the crust before baking.
Bake 375 degrees Fahrenheit for 20-30 min until crush is golden and edges are a darker golden brown... check on the pizza pockets after 20 minutes since timing will depend on the crust used. The crust I used took about 28 min.
While pizzas are baking, pour marinara into a separate bowl or dish for dipping.
Let cool for 5-10 min and serve hot.
