How to Make Sauerkraut and Noodles (Episode 52)

Here’s a perfect side dish for your homemade Polish sausage—a dish that can be made with two pots and in under one hour. An alternative to making traditional pierogies, if you will. All you need is noodles, sauerkraut, and butter. And if you need recommendations and tips for perfecting this recipe—we have that, too.

Ingredients
1 jar of sauerkraut
1 onion
1 box of pasta
about 1/2 cup butter, added throughout cooking process

Directions
1.) Cut up the onion. Set aside. Strain the liquid from the sauerkraut. Set aside.
2.) Add about 1/4 cup of butter to a pan on high heat. When the butter starts to foam, add the onion. Reduce heat to medium high and cook for 10 minutes, until onions are browned.
3.) Add the sauerkraut to the onion. All the ingredients to sautee together.
4.) While the onion and sauerkraut is sauteeing, bring a pot of water to boil. Add olive oil and salt to the water and cook the pasta.
5.) Drain the cooked pasta in a colander. Do not rinse the pasta.
6.) Add the cooked pasta to the onions and sauerkraut. Add more butter if the mixture is too dry, about 1/4 cup if needed.
7.) Crisp the noodles and sauerkraut in a 350 degree oven for 15 minutes.
8.) Remove from the oven and serve.
